Featuring a live cooking station the restaurant stands out from the rest with the native charcoal grill that is used by the original south americans to cook the very dishes. The grill makes the flavors more charismatic and the food even more original and tastier. The experiences at the Dinner only restaurant is sensational- open every night the restaurant offers changing buffets for starters and desserts. However, for the main course the restaurant offers an Ala Carte set menu with the best dishes from the South American cuisine.

We sat down with Anand Fernando, the sous chef of the restaurant to talk about the dishes, the environment and his own past experiences in the Maldives. Chef Fernando started his culinary expertise in the Maldives in 2004 at Embudu Village, later working in Four Seasons Resorts Maldives at Kuda Hura, Atmosphere Kanifushi in a span of 13 years. Now working at the Amazonica restaurant chef Fernando specializes in poultry and meat cooking – with the South American cuisine’s vast usage of these the chef is confident to deliver an exceptional service to the guests.
Chef Fernando delivered two native dishes from the cuisine to us, The Red Quinoa – a Peruvian dish featuring corn, parsley, mint leaves, hard boiled eggs and bell pepper. And Amaranth Salad- A Mexican starter which delivers great relaxation to the taste buds.
Emerald Maldives opened their doors to the world on 01st August 2019, and the Amazonico has witnessed fully occupied dinners at their 45-60 seating for every night since then, and according to Chef Fernando the most preferred main dish, both by him and the guests is the Beef Picanha- A Brazilian dish with packs of flavors and tender red meat. When asked about the most suited drink with the dish he insisted that the Red Wine would go perfectly with the red meat. Emerald Maldives offers a selection of world class wines for their guests.
